Ingredients
- 2–3 ripe bananas, mashed
- 2 eggs, beaten
- ¼ cup oil (vegetable, coconut, or avocado oil)
- ½ cup almond or peanut butter
- ½ tsp salt
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ cup ground flaxseed
- 1½ cups oat flour (blend oats in vitamix until powder)
- 2 tsp baking powder
- Strawberry jam (to your liking)
Inspired by Bobo’s Strawbetty Stuff’d Oat Bites—but homemade, nourishing, and free of additives. Also adapted from Love & Other Spices’ Banana Oat Muffins.
Instructions
- Preheat oven to 400°F and line a mini muffin tin or small baking dish with parchment.
- In a bowl, mash bananas until smooth.
- Whisk in eggs, oil, nut butter, brown sugar, vanilla, cinnamon, and salt.
- Add in flaxseed, oat flour, and baking powder, mixing until just combined.
- Scoop about 1–2 tablespoons of batter into each muffin cup.
- Add a small spoonful of strawberry jam to the center.
- Top with another spoonful of batter to cover the jam.
- Bake for 6 minutes and then adjust the temperature to 350°F and cook for another 25 minutes or until lightly golden and set.
- Let cool before removing from the pan.
- Place in ziplock or glass container to freeze.
