Better Than Bobo’s Strawberry Stuff’d Oat Bite Recipe

Ingredients

  • 2–3 ripe bananas, mashed
  • 2 eggs, beaten
  • ¼ cup oil (vegetable, coconut, or avocado oil)
  • ½ cup almond or peanut butter
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ cup ground flaxseed
  • 1½ cups oat flour (blend oats in vitamix until powder)
  • 2 tsp baking powder
  • Strawberry jam (to your liking)

Inspired by Bobo’s Strawbetty Stuff’d Oat Bites—but homemade, nourishing, and free of additives. Also adapted from Love & Other Spices’ Banana Oat Muffins.

Instructions

  • Preheat oven to 400°F and line a mini muffin tin or small baking dish with parchment.
  • In a bowl, mash bananas until smooth.
  • Whisk in eggs, oil, nut butter, brown sugar, vanilla, cinnamon, and salt.
  • Add in flaxseed, oat flour, and baking powder, mixing until just combined.
  • Scoop about 1–2 tablespoons of batter into each muffin cup.
  • Add a small spoonful of strawberry jam to the center.
  • Top with another spoonful of batter to cover the jam.
  • Bake for 6 minutes and then adjust the temperature to 350°F and cook for another 25 minutes or until lightly golden and set.
  • Let cool before removing from the pan.
  • Place in ziplock or glass container to freeze.
